In The Kitchen - King prawn pasta dish

I've been a busy bee in the kitchen this week making yummy meals and treats. Today I'm sharing a meal I adapted from this one here. I changed a few things and added some ingredients that I had in our fridge. I loved how it turned out and Paul loved it to the point where he wants it as a weekly meal ha! I really do love cooking and I'm always on the lookout for new recipes.

Here's what you'll need -

1 red bell pepper chopped
5 large mushrooms chopped
1 medium white onion chopped
2 tbs of minced garlic
2 tbs of butter
1/2 tbs of olive oil
1/2 glass of white wine
100g raw jumbo king prawns
1/2 cup of fresh Parmesan cheese
8oz of tagliatelle pasta (use any pasta your prefer)
1/2 fresh lemon
salt & pepper to taste

1. Heat the olive oil & butter in a heavy pan on medium heat. Once melted add the onion, mushrooms and red pepper and cook until softened. Add the garlic and let it cook for a few minutes. Add the white wine and then let it simmer until it reduces.

2. Next cook your preferred pasta according to the pack directions. Once cooked drain and then pop to one side until its needed. Add a little butter to the pasta to stop it from sticking together.

3. Go back to the heavy pan of veggies, add your raw prawns and salt & pepper. Cook through for about 3-4 minutes until the prawns are nice and pink. Once everything is cooked add the pasta and Parmesan to the pan. Stir through until everything is coated in the creamy cheese sauce. Add more salt & pepper if you like. Lastly add a squeeze of lemon juice over the whole dish and a sprinkle of Parmesan cheese. Serve right away!
